Pasta picks up rustic flavours; wild hare slow braised with sweet fragrant spices, or fascinating funghi & truffle. Exotic meats and game shine with plump figs, quinces and new season apples. The harvest blooms with courgette blossoms, pomegranate, persimmon & rhubarb. Savour sun-kissed figs with prosciutto San Daniele or mop up Richard’s saucy casserole of baby goat. Conclude with a Ruby Port & Stilton or his Swiss souffle served with all the trimmings.
